Assist in monitoring and controlling Food & Beverage costs for the various outlets via the preparation and analysis of the weekly costing report, as well as via follow up meetings with the outlet Managers and Chefs as and when the need arises. Ensure that the Storekeeper for dry goods and beverages checks stocks daily and replenishes based on established par stocks. Ensure that all stock items are stored in an organized manner and at the proper temperature and issued on a first-in first-out basis to maintain fresh quality. Also conducts spot checks to ensure that all perishable items are dated. Coordinate and participate in monthly food and beverages as well as retail outlets' stock takes. Ensure that discrepancies are reported to the Cost Controller. Input food & beverages inventory count sheet into the Adaco System. Check & investigate any stock discrepancies. Perform monthly Event Order analysis. Verify all event orders against internal transfers from Adaco system. Check GL coding, quantity and pricing. Perform recipe costing & butcher tests. Ensure accuracy and completeness of recipes, conduct butcher tests in the kitchen and review wastage (buffet) daily or weekly. Follow up with F&B team regularly on cost related issues (eg. FOC, sponsorship, events, promotion). Back up Receiving Area/Main Store for goods issuing and replenishment, posting goods to various outlets through Adaco system and receiving function. Report any discrepancies to Purchasing Manager or Executive. Perform month-end cost analysis including commentary, promotion, sales mix and inventory Status Analyses, month-end inventory, slow moving product, stock turnover and stock variance reports. Regularly cross-check all prices / suppliers selected by Purchasing department. Maintain cleanliness and tidiness in the Receiving/Store areas at all times. Check temperature of refrigerators/freezers/wine coolers daily. To work closely with the Head Sommelier and Bars Manager to ensure beverage cost is well controlled Create/update recipes (food, beverage, special costing) in Adaco system. Create/update new menu item in Point-of-Sale system (Infrasys) for F&B and Retail outlet. Undertake any other duties as and when assigned.
Minimum GCE ‘A’ Level or Diploma, Advanced/Higher/Graduate Diploma Minimum 3-5 years in a Cost and Inventory Control role in F&B or Hospitality industry Candidate with HACCP(SS590) experience will be an added advantage to the role Candidate with WSET Level 1 will be an added advantage to the role 2-3 years of experience in a cost accounting or financial analysis role, preferably within the service industry Knowledge of club accounting software and Point of Sales (Infrasys) Mature, meticulous, strong interpersonal skills, confident, approachable, patient with excellent communication skills Ability to study, analyze and interpret financial information with a strong understanding of overall F&B or hospitality operations
